The careful harvesting and production process using cold extraction results in a balanced and harmonious extra virgin olive oil.
The nose reveals a fruity olive aroma with ripe notes, highlighting its complexity on the palate with hints of olive leaf, tomato, banana and fig. On the palate, ripe sensations such as banana and fig continue to predominate, although there are also some green notes that accompany the bitterness, such as olive leaf, and a slight astringency reminiscent of artichoke. In the final phase of the tasting, we find notes of almond and the characteristic spiciness of this variety, which is medium-high in intensity, providing an ideal persistence to combine with our dishes.
Food pairing: Thanks to its high intensity bitter and spicy characteristics, you can prepare excellent combinations and dishes with less oil than other varieties. It is highly recommended for frying, as the Picual variety maintains its properties at high temperatures. It is also recommended for use raw on red meats or stews and as a dressing on salads or toast.
