Olive oil from Toledo

The most popular olive variety used in Toledo is Cornicabra, although recently other varieties, such as picual and arbequina have been introduced. A large part of the province is covered by the Hills of Toledo Designation of Origin which only certifies olive oils produced from the Cornicabra variety, which is noted for its intense flavours and high polyphenol content as well as other natural antioxidants.
