Extra virgin olive oil produced in Los Navalmorales (Toledo) with olives of the Cornicabra variety and certified with de P.D.O. Montes de Toledo.
This extra virgin olive oil is harvested at its optimum moment of ripeness, giving rise to an exceptional complexity of aromas. In order to select this optimum moment of ripeness, field monitoring is carried out, analysing the fruit from different plots, from which only those with the best parameters are selected. The objective is the search for excellence, combining exhaustive management of the olive grove throughout the year to obtain olives with excellent characteristics, and control of all the basic operations of the production process in the oil mill.
On the nose it has a medium intensity green fruitiness with fruity notes of ripe apple and strawberry and hints of green olives and aromatic herbs, such as thyme and rosemary. On the palate it has a medium intensity of bitterness and spiciness with a very pleasant, balanced and clean lingering finish. The aftertaste is fruity, with a predominance of sweet fruit, subtle hints of orchard and bitter almond.
Food pairing: It is highly recommended for frying, as the Cornicabra variety maintains its properties at high temperatures. It is also recommended to be consumed raw, accompanying salads, toasts or pizzas, as well as red meats, fish with intense flavours (salmon, cod), cold creams and desserts.
More than 70 national and international awards accredit the quality of Finca La Pontezuela extra virgin olive oil. Its Cornicabra variety has been awarded in renowned competitions such as New York International Oliva Oil Competition, Olive Japan or Terraolivo and has been highlighted in Flos Olei or Iberoleum, among others.
