In 1986, Francisco Riberas, one of the strongest Spanish entrepreneurs, acquired the farm La Ventilla, in El Carpio de Tajo (Toledo), to begin his rise in agricultural negotiations. He managed to imprint his special character on the new activity and over time to expand the limits of this small farm in order to make it an enormous mosaic of cultures and uses.

Almost ten years later, in 1996, he undertook an ambitious transformation of the farm by successively planting 300,000 olives. The favorable conditions of this area and the application of great devotion, allowed that the cultivation proved to be very generous, thus offering olives of impeccable quality.

Only from a deep respect and knowledge of the profession, bringing together the enjoyment of the countryside with more and more technological innovations in agricultural management, the most precious attributes of this ancient fruit have been able to express themselves in all their excellence.

This oil is intended to be a simple tribute to his family and to all those who had the privilege of working with him, the one and only Francisco Riberas, who did not see the outcome of this project.

The olive grove

The RíoTajo basin, which passes through the province of Toledo, models a very typical stepped landscape which, on its southern slope, rises from the plains to the rañas of the mountains. In this geographical setting and on a slightly undulating topography ranging from 400 to 600 meters above sea level, our olive trees are located, alternating with other uses and interspersed areas of forest. The cultivation of olive trees is very old in the region as we find in Mozarabic documents.

The climate is harsh, very cold in winter and very dry and hot in summer, thus favoring the natural control of parasites and diseases. Rather low rainfall and modern deficit irrigation techniques favor the quality of the fruits and effectively curb the excessive vigor of the trees, allowing the production of very delicate oils. With the arrival of autumn, temperatures drop, but without freezing, guaranteeing optimal conditions at harvest time. The olives, harvested directly from the tree, are immediately transported to the oil mill to avoid any deterioration.
