Elizondo extra premium virgin olive oil is produced from the Picual and Royal varieties. The olives are harvested between late October and early November, before the sidewalk, when the fruit is still green and retains all its organoleptic attributes, as well as its maximum splendor in fruits, aromas and flavor, reaching the requirements of the most gourmet palates.
