Extra virgin olive oil of early harvest and cold extraction produced in Íllora (Granada) with olives of the Lucio variety.
It is an oil with a green-ripe fruitiness and medium-high intensity notes of aromatic herbs, especially thyme and camomile. There are also light fruity notes of apple and almond. It has a slightly sweet entry on the palate with an immediate increase in bitterness and spiciness of medium-high intensity. It is a very peculiar oil due to the complexity of the notes found.
Food pairing: This is a high quality and very versatile oil. To appreciate all its nuances and to preserve its properties intact, it is advisable to use it exclusively in its raw state. Enjoy it in salads, pasta dishes, white fish and toast.
