With a more fruity than herby flavour. The fruits we note are apple, and especially green banana.

In the mouth, it is barely bitter. There is a characteristic astringency of green banana and green almond. The spiciness is persistent.

Recommended uses: For fish, fruit salads, sauces (mayonnaise or aioli), it is highly recommended for use in pastries (vanilla ice cream and bitter chocolate chips)
