Olive oil of high intensity with principally unripe tones, but also hints of ripe fruits in their optimum moment of maturity. It is this perfect balance that makes for a sweet, bitter and spicy taste all in one.

This virgin olive oil is from Carcabuey (Córdoba) and is a mixture of the picual and hojiblanca varieties.

Formed by the grouping of two cooperatives producing olive oil protected under the Denomination of Origin Priego de Córdoba: S.C.A. Nuestro Padre Jesús Nazareno and S.C.A. Virgen del Castillo

The olive oil produced in the mills comes from the Priego de Córdoba area, in mountainous areas with limestone soils. The cultivated varieties are: picudo 50%, picual 30% and hojiblanca 20%, with a planting density of 99 - 100 olive trees per hectare, and an average age of approximately 300 years. The collection is manual and mechanized mixed.

The processing system is made by continuous process of two phases in cold extraction, stored later in the cellar, with stainless steel tanks and trujales, covered and conditioned for that purpose in 26,000 square meter facilities.

At present, the Cooperative has 2,000 olive-growing partners, of which 600 are also quince producers. The surface occupied by the quince is 200ha, obtaining a production of 4000T, of which a good part goes to the international market.

In September 1999, the cooperative was recognized as an Organization of Producers of Fruits and Vegetables, with the objective of improving the quality of production and adapting it to demand. For this reason, the cooperative monitors the crop, advising the farmers at all times and visiting the plantations.
