The varieties of olives that are used for the olive oils protected by the Countryside of Jaen designation of origin are picual and arbequina. These are flavourful and fruity olives with hints of bitter and/or spice. The olive oils that are collected early are known to contain the scents of freshly-cut grass, green leaves, tomatoes and green apples. Those which come from ripe fruits have a scent of figs and bananas and taste somewhat sweet. The geographical surroundings for this designation of origin are located in the centre and south-west of the province of Jaen, near the Valley of the Guadalquivir river and parts of the Sierra Morena.
