Extra virgin olive oil of early harvest and cold extraction produced in Los Villares (Jaén) with olives of the Picual variety.
On the nose, the organoleptic display begins with an intense aroma of green olives, freshly cut grass and olive leaf. This is followed by fruity hints of tomato plant, fig tree, artichoke stalk, green banana and green almond. It culminates with hints of aromatic herbs and slight hints of chlorophyll. On the palate, it has an intense and complex fruitiness that confirms what was perceived on the nose, with a very fresh entry and a balanced body between bitter and spicy notes of medium intensity. It is a very harmonious, elegant oil with great persistence.
Food pairing: Salads, fresh or toasted bread, fish and cheese. It is also a spectacular accompaniment to raw food, enhancing its flavour.
Jabalcuz Gran Selección was one of the eight award-winning oils in Jaén Selección 2025.

The Sociedad Cooperativa Andaluza Sierra de la Pandera was founded in 2004 as a result of the merger of S.C.A. San Juan Bautista and S.C.A. Nuestra Señora del Rosario, both from Los Villares (Jaén).
With this merger, the S.C.A. Sierra de la Pandera set new objectives and new goals in the commitment to quality in production, in the marketing of its oils and in the improvement of productivity, thus the first of the brands was born: Aceites Jabalcuz, a premium extra virgin olive oil at a very competitive price.
