The first young Arbequina Extra Virgin Olive Oil refined in Amontillado sherry casks used for over a halft of century ageing.
Surprising on the nose. Extremely evocative. Reminiscent of roasted nuts, fine wood (woodwork), ripe fruit, and mushrooms (St. George’s muschoroms). With a delicate hint of sherry.
Ther first taste is mild and elegant. Smooth and sweet on the palate. Complex with a broad range of nuances. Notes of iodine, roasted hazelnuts, intermigled with hints of ripe avocado. The finish clearly reveals traces of barrel wood, a hint of medium-dry sherry with an "umami" nuance that makes it perfect for seasoning a wide range of disches.
