DESCRIPCTION:

It is a little known variety and sometimes confused with Picual. It stands out in its denser, herbaceous texture.  Very balanced in the mouth, among sweet, bitter, and spicy. The favorite of the fish grill.

White fish, carpaccio, pasta, sauces, and purées. Ideal for dishes that do not have the oil taking centre stage.
