Fruity extra virgin olive oil with medium- to high-intensity green olives, with notes of olive leaf and almond and hints of apple. It has a somewhat sweet initial flavour with medium-intensity bitter and spicy flavours. It is very well balanced with a green almond aftertaste.

Because of its sensory profile, it is ideal for accompanying foods such as red meat, veal, or rabbit, cured cheeses, and some strongly flavoured fish, such as cod. It can also be used as a dressing for green bitter-leaf salads, for making tomato sauces, gazpachos, and salmorejos, pickles, pasta dishes, or toasts with oil. It is perfect for drizzling on boiled or grilled vegetables such as aubergines, broccoli, or green asparagus, and to finish bean dishes and many stews.

He was born into a family dedicated to agriculture. Located in the Sierra de las Villuercas (Cáceres), where there is a great olive tradition, the oil obtained from his olive trees transmits all the love of the land cultivated by the Santos Díaz family.

 

On the banks of the Ibor River, there is a rich community of wildlife; Luckily, the farm is frequently visited by deer, wild boar, and foxes.

 

The company is called “el Tilo” after a very old Tilia tree that has seen the olive trees grow during all these years.

 

All efforts and knowledge in the field and olive agriculture have been passed down from generation to generation, which has improved and translated to the improvement and refined quality of our mono-varietal olive oil.
