Organic balsamic vinegar from Pedro Ximénez
Mahogany color, fruity with sweet touches and aromas typical of the PX variety such as raisin, caramel and honey. It has aging notes in American oak, in the mouth balance between the natural sweetness of the grape and the acidity.
Recomended uses: Cold soups, salads, pickles, marinated dishes, game dishes, red meats. Reduction with accompaniment of cooked dishes, foies and desserts with red fruits. Acidity 5º.
The caviar of extra virgin olive oil
Form of presenting olive oil with the spherification technique in which a texture similar to that of caviar is obtained.
Tasting notes: The oil caviar is made with extra virgin olive oil of the 100% picual variety. Characteristics of the variety, with an intense fruity flavor. On the palate with a balance between spicy and bitter and a texture similar to that of caviar.
Recomended uses: Salads, starters, canapés, vinaigrettes, cold soups, fish, meat, vegetables and pasta and for decorating dishes. We do not recommend its use for hot cooking, since it would break the texture that covers it.
