Castillo de Canena produces this oil by infusing cold smoke. Its elaboration is made from a careful process that maintains all its essence and quality and avoids that its properties are altered without losing its flavor.
 
Extra virgin olive oil produced in Canena (Jaén, Spain) of olives of the Arbequina variety.
 
Its tasting evokes fresh aromas of apple and almond, with a warm caramelized touch, vanilla and toffee.
 
Its smoky aroma is ideal for raw use in all kinds of meats and fish, salad dressings and sauces.

Our olive groves are carefully supervised and cared for in their different annual agricultural tasks. Our olives are selected at the optimum moment for their collection by hand, and be respectfully transferred to our mill. This guarantees the quality of flavors and aromas, supported by facilities already in the process of ISO 22,000 certification.

More than 75 people make up our team; managers, field experts, farmers, masters of oil mills, quality controllers and processes in the mill, economists, management and administration personnel, commercial executives, etc.
